Seth’s Philly Cheesesteak Stuffed Bell Peppers

IMG_4042 We’ve had a few dessert recipes, so here’s something fresh. Fresh from the mind of my fiance (!), Seth Wilson. Here we have Philly Cheesesteak Stuffed Bell Peppers. It’s an explosion of cheese wiz, steak and bacon in your mouth. Need I say more? Alright. Let’s get cookin’. IMG_4022 First things first, turn the oven to broil. Next, fry the meat in a pan on mid-high heat and add minimal seasoning, if you’d like. For two people, we cut up six pieces of bacon and two flank steaks. IMG_4030 While this bad boy was frying, I cored the peppers. We had two peppers per person. IMG_4024 Just take your peppers and slice off the top 1/4 ” of the bell pepper and dig the seeds and other insides out with a spoon. For the pesky seeds that stay and are hard to remove, rinse the bell pepper cup out with water. IMG_4034 Just a pretty sweet pepper shot. IMG_4033 You can sear the peppers in the meat grease for 5-6 seconds. IMG_4036 Fill the cups each with 1-1.5 Tbsp. cheese wiz. Be careful, this is where you can overdo your carbs (for ketoers), add in the steak and bacon until your cups are filled. Slap a slice of cheese on top. Your preference of which kind. Slide them onto a pan with some foil and into the oven to broil for 3 minutes, so the cheese can melt. IMG_4038 Look at those suckers broil! Yum! IMG_4039 A little bacon garnish and voila!
